About Me

Hello world, that's me, Kari!  I'm the one on the left... the one without the beard!  Although, at times I could probably grow a beard if it wasn't for my handy dandy tweezers!   The handsome man on the right is my hubby.  My rock and my best friend!  He puts up with me and takes care of me, even when I'm sure I irritate the crap out of him.

I love flip flops!  I have more flip flops than any other pair of shoes!  They're great!  You slip them on, slip them off, when they go bad, you buy more!  Easy Peasy!  I'm in them as soon as it gets warm enough to wear them, and stay in them until it gets too cold!  Sometimes I just wear them anyway... What the hell!  My hubby found a sign for me for my office, which inspired me to name my blog after it!  Because a day in my flip flops aren't always a walk in the park!

My story... I love to blog.  We have a food blog that I was doing on a regular basis, but just couldn't find the energy to keep it up.  As much as I love food, it is also my enemy!  For those of you who suffer gut problems, and have food allergies, I am sure you can sympathize with me on this.  It's hard to write every week about food, when you almost just don't want to look at it anymore.  Don't get me wrong.  I love to create new and exciting things, and you will probably find some nifty recipes pop up here and there.

Health wise... My body hates me!  I have determined that!  No, I am serious, it literally hates itself.  I have Autoimmune Disease.  In a normal person, their body's immune system protects them from disease and infection, in someone with an Autoimmune disease, your body will attack healthy cells by mistake.  I have Hashimoto's, which is an autoimmune disease of the thyroid and Celiac Disease, which is also an autoimmune disease.  Either way... inflammation is a big enemy of mine.  I have to remove things that trigger an autoimmune response in my body.  It's been a journey.  An exhausting journey.  It seems as though I keep having to eliminate one thing after another to be able to get through the day.

I know a lot of people are going through the same thing, and sometimes just knowing that someone else is going through something, makes you feel less alone in the battle.  I'm hoping by sharing my experiences,  I can offer ideas, maybe a laugh or an open ear to someone who needs it!
